Around 80% of the farm is planted with Caturra and Catuai blends. The La Mimada plot hosts Pacamara, Caturra, Bourbon and Geisha varieties. Temperatures here can drop below 13°C. Abundant tree cover regulates temperature fluctuations and contributes to sweeter, cleaner, brighter cup profiles.\u003cbr\u003eAll coffees from La Mimada are naturally dried slowly on African beds for 20 to 28 days. Processing methods include washed, honey, natural and extended fermentation. Afterwards, cherries are laid on raised drying beds inside the same windowless chamber with stable temperature and zero light exposure. Dehumidifiers maintain consistent conditions throughout slow drying.
