About farm:Located at high altitude in Boquete, Panama, near the Barú Volcano, Finca Lorayne is a family-owned farm with a long-standing coffee tradition. In 2018, family descendant Marcus Duran officially founded "Adaura Coffee" at Finca Lorayne. The name "Adaura" was created to honor his grandparents, Adalberto Rosas and Aura Rosas, who taught the family to cherish the land and its heritage. Under the leadership of Marcus and farm manager Edwin Rosas, the farm balances traditional practices with the production of exceptional specialty coffee, focusing especially on the rare and highly esteemed Geisha variety. About process:After pulping, the coffee is fermented with a continuous feed of pectin-rich mucilage (mosto) saved from previous fermentation batches, using this continuous fermentation process to enhance flavor complexity. Following fermentation, the coffee is washed and then slowly and evenly dried on wooden trays inside a drying room equipped with dehumidifiers. |
