About farm: Cañas Verdes is one of the most iconic farms of Hacienda La Esmeralda, situated on the slopes of Volcán Barú. The land has been owned by the Peterson family since 1967; originally used for livestock raising, it was later converted into specialty coffee plantation. After Geisha gained worldwide fame in 2004, the estate expanded its coffee cultivation continuously. Benefiting from high-altitude volcanic soil and exclusive microclimate, coffees from Cañas Verdes have won numerous international awards and become a benchmark for Panama specialty coffee. Cold Fermentation Washed Process: After harvesting, ripe coffee cherries are depulped via washed processing, then fermented for 72 hours inside low-temperature fermentation rooms. Finally, parchment coffee is slowly dried on raised beds for 17 days. |
