About farm：Finca La Siria is located near La Argentina in the Huila department, where the coffee trees grow at a high altitude of 1,900 meters. The sharp contrast between day and night temperatures slows down the ripening of the coffee cherries, allowing them to accumulate higher sugar levels and more complex organic acids. Anibal, a third-generation grower, manages the farm alongside his sister, cultivating both Geisha and Tabi varieties. In 2021, the first time he submitted his coffee to the Cup of Excellence (CoE), he captured second place with an impressive score of 90.07. This achievement instantly brought him international renown in the specialty coffee world, placing his coffees permanently on the sourcing lists of top global roasters. About process：Only fully ripe, deep-red cherries harvested at peak maturity are selected. Density sorting is conducted via water flotation to discard floaters and defective beans. De-pulping takes place on the very day of harvest to lock in freshness, followed by a 30-hour dry fermentation—the key to developing its crisp acidity and refined structure. Finally, the coffee is slowly dried on African raised beds to ensure even moisture loss and a exceptionally pristine flavor profile. |
