About farm: The Spanish Castro-Jimenez family of Costa Rica joined forces with the German Kahle family from Jalisco, Mexico, to launch their coffee business at the beginning of the 19th century. Alejo is the fifth generation of the Castro-Kahle family, whose ancestors have cultivated coffee on the slopes of Poás Volcano in central Costa Rica for over a century. To this day, descendants of the family remain committed to stricter quality standards. They preserve natural resources by purchasing and expanding native rainforest land to raise awareness of environmental conservation. The estate also implements a wide range of initiatives to mitigate air pollution and global warming. Harvesting commences at the optimal ripeness stage after measuring fruit Brix levels. After picking, fresh coffee cherries are transported to the wet mill for flotation sorting and washing to remove impurities and ensure cleanliness prior to fermentation. The whole intact cherries are then sealed inside fermentation tanks for 5 days of anaerobic fermentation, with continuous monitoring of fermentation temperature, Brix and pH values throughout the cycle. Once fermentation concludes, cherries are spread evenly on drying terraces for 12–15 days of sun drying. Staff turn the cherries regularly between 8 a.m. and 2 p.m. to guarantee uniform dehydration. Finally, the parchment coffee is transferred to large mechanical dryers for an additional 8 hours of gentle slow drying. |
