About farm: Elto Coffee was founded by Eliyas Dukamo and Atiklit Dejene, a couple deeply immersed in specialty coffee. The name "Elto" derives from the local language, meaning "surpassing passion" and "fertility". The couple aims to produce unforgettable high-quality coffee.
Elto Coffee specializes in green specialty coffee beans, dedicated to building a better coffee community. They operate a processing facility in Sidama, Ethiopia, focusing on exclusive experimental processing for micro-lots. Their processing portfolio includes washed, natural and honey processes. Elto Coffee strives to make a positive impact within the specialty coffee sector and set a benchmark for the industry.

About process:This lot uses natural sun-drying. After harvesting, coffee cherries are sorted by density and quality via flotation. The cherries then undergo 48 hours of anaerobic fermentation, before being laid out on raised African wooden drying beds. These beds sit 1.2 meters above ground and are covered with plastic mesh. Cherries are spread to a thickness of 3–5 cm to allow airflow from top and bottom. Workers turn the cherries every 20–30 minutes to guarantee even drying.
