About farm: Elto Coffee was founded by Eliyas Dukamo and Atiklit Dejene, a husband-and-wife team deeply immersed in specialty coffee. The name "Elto" derives from the local language, meaning "surpassing passion" and "abundance". The couple aims for Elto Coffee to produce unforgettable premium green coffee. Operating a mill in Sidama, Ethiopia, Elto Coffee specializes in exclusive experimental micro-lot processing techniques including washed, natural and honey profiles. The brand strives to make positive contributions to the specialty coffee industry and set exemplary standards for the trade. About process: Washed honey, after harvesting, ripe coffee cherries go through flotation sorting to separate fruit by density and quality, then fermented inside sealed tanks. Once fermentation finishes, the cherries are rinsed to remove outer pulp while retaining the sweet mucilage layer. The parchment coffee is then spread onto wooden African raised drying beds 1.2 meters above ground, lined with breathable plastic mesh, laid at a uniform thickness of 3–5 cm to enable vertical airflow. Female farm staff turn the coffee every 20–30 minutes for consistent even dehydration. All work surfaces and hands are kept thoroughly clean throughout the process, as sticky mucilage easily traps dust and foreign contaminants. |
