About farm: The owners of Gesha Village are Adam Overton and Rachel Samuel. The farm site was selected based on strict altitude criteria, ample rainfall, suitable temperature patterns, fertile virgin forest soil, mature shade trees and the existing native coffee ecosystem. The coffee farm lies near Gori Gesha Forest in remote western Ethiopia, widely recognised as the birthplace of the Gesha lineage, which has spread across the globe to this day. The Oma Block is named after a revered local religious leader. Gesha is rare, distinctive and premium-priced, and is commonly associated with Panama; however, commercial cultivation of the Gesha variety only began in the 1960s. Gesha 1931 originates from this exact area. Its name references the location and year it was collected by scientists, who dispersed during a research expedition across Ethiopia to catalogue native coffee varieties. About Process: A fermented liquid is produced by fermenting fresh coffee fruit and mucilage over 72 hours, rich in active yeast, beneficial bacteria, organic acids and sugars. This liquid is blended with mucilage-covered coffee beans at a ratio of 1:8, followed by 84 hours of temperature-controlled anaerobic fermentation. This rapidly establishes dominant microbial communities to boost fermentation efficiency and consistency. The coffee is then sun-dried under shade until moisture content reaches 11%. |
