About farm:Finca Los Ciruelos sits in Selguapa, Comayagua, Honduras, at 1,750 masl. Of its total 8 hectares, 4.5 hectares are under coffee, yielding roughly 65 bags yearly. High elevation, clay soil and 2,500 mm annual rainfall create its distinctive terroir. Israel Ramírez started farming coffee in 1990 on a small plot. Struggling through periods of low commodity prices, he took side jobs to slowly expand his farm. When Rony Gámez introduced local growers to specialty coffee and micro-lot standards, Israel pivoted to prioritizing quality for fairer prices. Reinvesting specialty coffee profits, he built solar drying infrastructure and upgraded his wet mill, bringing stability to his family. He harvests only ripe cherries, removing defective ones by flotation. Cherries are depulped the same day, fermented 24–30 hours, rinsed and sorted. The parchment dries slowly on raised beds in solar sheds for up to 25 days before clean storage to maintain lot consistency. |
