About farm: Lamastus Family Estate is a collective of four coffee farms located in Boquete, Panama, including the renowned Elida Estate, founded by Robert Lamastus in 1918. The Elida Estate covers a total area of 65 hectares, with more than half of its land situated within the ecological protection zone of Volcán Barú National Park. This protected area is home to a diverse range of rare flora, birds, butterflies, and mammals, including the jaguar. Volcán Barú is one of the highest-elevation volcanoes in Central America, reaching 3,475 meters above sea level and covering an area of 14,000 hectares. Its unique topography creates seven distinct climate zones along different altitudinal gradients. Thanks to its exceptional high-altitude environment, the region offers unparalleled conditions for coffee cultivation. About process: This is one of the estate’s most technically advanced and complex processing lots. Every stage of the process has been meticulously calibrated to the unique conditions of Elida Estate’s ultra-high-altitude environment. The coffee undergoes a honey process combined with Anaerobic Slow Drying (ASD), Native Yeast (NY), and Carbonic Maceration (CM), followed by 3 days of rotary fermentation (RF3D) and subsequent cold-room drying (CRD). |
