About farm: Lamastus Family Estate comprises four coffee plantations located in Boquete, Panama, including Elida Estate founded by Robert Lamastus in 1918. Covering a total area of 65 hectares, more than half of Elida Estate lies within the ecological protected zone of Volcán Barú National Park, a sanctuary for rare plant species, birds, butterflies and mammals such as jaguars. Volcán Barú is one of the highest volcanoes in Central America, standing at 3,475 meters with an area of 14,000 hectares. It features seven distinct climate zones shaped by varying latitudes. Benefiting from its high-altitude terroir, this region offers one-of-a-kind conditions for coffee cultivation. About process: This is among the estate’s most technically sophisticated and complex lots. Every stage of the processing workflow is finely calibrated within Elida Estate’s high‑altitude environment. Honey processing combined with Anaerobic Slow Drying (ASD), Native Yeast (NY), Carbonic Maceration (CM), 3‑day Rotary Fermentation (RF3D), followed by Cold Room Drying (CRD). |
