About Farm:HiU Coffee is a specialty coffee project founded by legendary Panamanian coffee producer Graciano Cruz. A prominent figure in both Panama and the global specialty coffee scene, Graciano Cruz is recognized as one of the pioneers of the Honey Process and Natural Process in Central America. HiU is dedicated to promoting ultra-high-quality micro-lots in Panama, with a strong focus on ecological sustainability and a strict commitment to using zero chemical fertilizers. Finca Emporio is situated in the Palmira region of Boquete, Panama, perched on the slopes of Volcán Barú at an elevation of 1,600 to 1,700 meters above sea level. The estate's management serves as a benchmark for biodiversity and sustainable agriculture. With a history spanning over 70 years, Finca Emporio is home to exceptionally healthy coffee trees across a diverse range of varieties, including Yellow Catuai, Red Catuai, Pacamara, and Typica. About Process:Harvesting is done entirely by selective hand-picking under strict quality control. Daily harvested Geisha lots are processed on-site at the estate, ensuring each batch fully retains the pure terroir of its specific plot. Cherries from individual sectors or plots are processed separately without blending, and each lot is dried individually on designated beds across the estate. Drying is 100% natural sun drying carried out on African raised beds, with no mechanical dryers used. This specific lot underwent the Anaerobic Honey process, featuring a 5-day fermentation period and a 17-day drying time. |
