About farm: Santos Café operates a 55-hectare plantation cultivated under native shade trees on volcanic soils, with elevations ranging from 1100 to 1400 masl. Around 80% of the farm is planted with Caturra and Catuai blends. The La Mimada plot hosts Pacamara, Caturra, Bourbon and Geisha varieties. Temperatures here can drop below 13°C. Abundant tree cover regulates temperature fluctuations and contributes to sweeter, cleaner, brighter cup profiles. All coffees from La Mimada are naturally dried slowly on African beds for 20 to 28 days. Processing methods include washed, honey, natural and extended fermentation. The farm aims to continuously innovate within the coffee industry, delivering outstanding cup quality and crafting a pleasant tasting experience for consumers. *Dark-room Natural Process: After harvesting ripe coffee cherries and thorough cleaning, whole intact cherries are placed in small tanks for full fruit fermentation at a controlled temperature of 23°C over 4 days. Afterwards, cherries are laid on raised drying beds inside the same windowless chamber with stable temperature and zero light exposure. Dehumidifiers maintain consistent conditions throughout slow drying. The whole controlled cycle lasts more than 38 days. |
