About farm: Finca El Porvenir is an independent coffee estate acquired by Camilo, the green coffee director of Venka, in Colombia. Nestled in the cloud forest belt of the Andes Mountains at 1,800 meters above sea level, the estate benefits from volcanic ash-enriched black soil and significant diurnal temperature variations, creating ideal conditions for slow coffee cherry maturation. About process: This coffee is crafted using a careful “dry honey” process, where the coffee cherry’s sweet mucilage is left on the bean to dry slowly, preserving its natural sugars and developing a rich, syrupy sweetness. The beans are dried in a controlled, low-light environment—the “dark room”—to protect delicate flavors and prevent over-fermentation. |
