About farm: Finca San Martín sits at 1,850 meters in Costa Rica and is run by Lisbeth Venegas and her daughters, honoring the legacy of the late Rodolfo Rivera—a devoted coffee grower who spent his life pursuing quality. In 2013, Finca San Martín began cultivating Geisha, using carefully selected seeds to ensure purity and exceptional cup quality. Geisha is renowned for its delicate florals, elegance, and complexity—qualities that are amplified under San Martín’s ideal growing conditions. The farm’s high altitude, rich volcanic soil, and cool climate create a perfect environment for producing clean, fragrant coffees with refined acidity. About process: Only fully ripe cherries are handpicked and floated to remove imperfect fruit. The cherries undergo an initial fermentation in bags, which are turned daily to maintain even fermentation. After this stage, the cherries are washed to remove skin and mucilage, then placed back into bags for a second fermentation. Once fermentation is complete, the coffee is thoroughly washed again and transferred to African raised beds to sun-dry slowly. When the beans reach their optimal moisture level, they are rested before export to preserve flavor and quality. |
