About farm: El Dorado, purchased by the Elder family in 2017, the estate initially grew almonds before switching to specialty coffee in partnership with CVM—a company owned by Bernard Uhe and his Colombian coffee-growing family, with decades of industry heritage. Now managed by the CVM family (generational coffee growers from Colombia's Ibagué region), it collaborates with local Ecuadorians to cultivate high-quality Arabica. El Dorado's exceptional coffee stems from favorable natural conditions: high altitude, fertile soil, mineral-rich mountain spring water, shade trees, and 12 hours of daily sunlight year-round. Natural practices (neem oil, organic compost) ensure coffee quality and health. The estate has earned recognition in prestigious competitions: its Green-Tip Geisha won 13th (2021, 88.52) and 4th (2022, 89.10) in the Cup of Excellence, plus 6th (2022, 90.10) and 3rd (2023, 89.75) in Ecuador's Golden Cup Competition. It cultivates five premium varieties: Green-Tip Geisha, Golden-Fruit Geisha, WushWush, SL28, and Heicha (new in 2023), divided into four plots tailored to each variety's needs—including the 1760-1810 masl SL28 plot (Lot 3's signature). About process: Ripe and bright red coffee cherries are hand-picked and fermented in bags for 4 to 5 days, with the exact duration depending on weather and temperature—4 days at 20℃ and above, and 5 days at 19℃ and below. The coffee cherries in the bags are turned 4 times a day. After fermentation, the cherries are depulped, and the depulped coffee beans are fermented again in bags for another 4 to 5 days, with the duration still determined by temperature (4 days at ≥20℃, 5 days at ≤19℃) and 4 daily turns. Once the fermentation process is complete, the beans are thoroughly cleaned. |
