About farm:Born from the vision of Martin Kutsch after his transformative journeys to Panama’s coffee heartland, Finca Eliza is cultivated in the lush Andean highlands of Loja. Managed by CVM and entrusted to master growers from Colombia and Ecuador, the estate combines pristine mountain water, deep volcanic soil, dense native shade, and natural eco-farming to elevate rare Arabica genetics to their purest expression. On its three high-elevation plots, Eliza cultivates world-stage varieties—Green-Tip Geisha, Bourbon Sidra, and Mejorado Typica—each celebrated for their luminous florals, crystalline sweetness, and remarkable depth. Crafted in one of Ecuador’s most privileged terroirs, Eliza’s coffees offer an elegant, competition-grade cup shaped by altitude, biodiversity, and unwavering dedication to excellence. About process:Ripe red cherries are handpicked and fermented in bags for 2–3 days, depending on temperature, with four daily turns. After pulping, the beans undergo a second 2–3 day bag fermentation, again temperature-controlled and turned regularly. The coffee is then fully washed to remove all remaining mucilage. |
