About farm: Eliza Estate, located in the high Andes of Loja, was acquired in 2016 by Martin Kutsch and his daughters after years of inspiration from Panama's Boquete coffee scene. Managed by CVM alongside experienced Colombian and local Ecuadorian growers, the estate benefits from high elevation, fertile soils, mineral-rich spring water, dense shade, and consistent sunlight. Natural pest control methods are used in place of chemicals, supporting a healthy ecosystem. The estate focuses on three specialty varieties—Green Tip Gesha, Bourbon Sidra, and Mejorado Typica, each grown in dedicated plots. The Green Tip Gesha is cultivated at 1,740 meters, where cool temperatures enhance floral clarity and elegance. About process: Only fully ripe red cherries are harvested. The cherries undergo a first anaerobic fermentation in sealed bags for 2–3 days, adjusted by temperature and turned four times daily. After depulping, the parchment is returned to bags for a second anaerobic fermentation of 2–3 days, again with regular turning. Once fermentation is complete, the coffee is thoroughly washed, resulting in a clean, expressive, and refined cup. |
