About farm: Jose began growing coffee on a small scale in 2006. However, due to a lack of other sources of income, he was unable to sustain his livelihood. Forced by circumstances, he left his family behind and went to the United States alone to earn money to keep the estate running. Fortunately, after several years of hard work, he was finally able to return to his hometown and resume personally cultivating and caring for his coffee trees. With the help of Rony Gamez, the head judge of Honduras' Cup of Excellence (CoE), he optimized the classification and batching of his coffee plants. At the same time, he began sel With the earnings from his harvests, Jose purchased more land and equipment, continuously expanding production. Thanks to the estate's high-quality coffee and commitment to environmental conservation, it has gained increasing recognition in the international coffee market and has become one of the outstanding representatives of specialty coffee in Honduras. About process: Only fully ripe coffee cherries are harvested. After picking, they are left in bags for about 20 hours, after which the pulp is removed, and the beans undergo natural fermentation for 30 hours. Once fermentation is complete, the beans are immediately washed and sun-dried. The entire drying process lasts approximately 27 days until the ideal moisture content is achieved. |
