About farm:The Spanish Castro-Jimenez family of Costa Rica and the German Kahle family of Chiapas, Mexico, established their coffee business in the early 19th century. Alejo, the fifth-generation descendant of the Castro-Kahle family, continues a century-old tradition of coffee farming on the slopes of Poás Volcano in central Costa Rica. Today, the family upholds strict quality standards while expanding natural rainforest conservation efforts to enhance biodiversity. The estate also implements measures to reduce air pollution and combat global warming. About process: This lot represents a bold attempt by Alejo in traditional fermentation. The batch utilizes an innovative process applied to the ancient Typica variety from the estate's Lima plot—a shaded cultivation area under primitive tropical rainforest vegetation. The harvest begins at an optimal time, with Brix levels measured beforehand. After picking, the coffee cherries are transported to the wet mill for flotation and washing, ensuring cleanliness before fermentation. The cherries are then placed in fermentation tanks and exposed to prolonged direct sunlight during Costa Rica's dry season. The fermentation temperature is maintained between 25–30°C, allowing partial mucilage retention for a 5-day fermentation process. Throughout this period, environmental temperature, Brix level, and pH value are consistently monitored. After fermentation, the beans are sun-dried on raised beds for 11 days, followed by 8 hours of slow drying in a large-scale mechanical dryer. |
