About Station:Gedeb Woreda, located at the southernmost edge of the traditional Yirgacheffe region, boasts the highest elevation in the area, averaging over 2,000m—significantly higher than Yirgacheffe town’s ~1,700m. The coffee trees here are also in their prime (10-20 years old), giving them a distinct advantage over older, declining trees in other parts of Yirgacheffe. The Guzguz Tatatu Washing Station, established in 2020, processes around 1,000 tons of cherries annually, yielding ~150 tons of coffee. Like its neighboring renowned micro-regions, Tatatu’s coffees exhibit classic citrus, floral rose, and bright stone fruit acidity. About Process:This Washed G1 lot was selectively harvested at peak ripeness during mid-24/25 season. After depulping, the beans underwent 36-hour underwater fermentation, followed by 15 days of sun-drying on raised beds until moisture reached ~12%. They were then stored in parchment until hulling in Addis Ababa prior to export. |
