About farm: Located in Panama's Chiriquí province, TNT Coffee Lab is an innovation-focused coffee processing laboratory. Founder Adrian officially launched this fermentation and processing project in 2024, collaborating with local Panamanian coffee farmers to create unique micro-lots that showcase Panama's ultimate coffee flavors through innovative techniques and terroir expression. Founded in 1950 by Don Urbano Santamaria in Paso Ancho, Chiriquí's high-altitude region (now managed by Edwin Santamaria since 1990). This 120-hectare farm grows Caturra (80+%), Typica and Geisha. Its high elevation (creating significant diurnal temperature variation), volcanic soil, and unique microclimate produce distinctive flavors. The estate practices organic farming (no pesticides), water conservation, and has earned Panama's top coffee concessions. About station: Adrian established TNT Coffee Lab through his partnership with Santamaria Estate, personally overseeing each processing stage to ensure exceptional quality. As Panama's 2020 Barista Champion and 2022 Runner-up (also a chef, roaster and mixologist), his deep flavor understanding makes TNT's coffees creatively artistic. About Process: This coffee goes through the "Jungle" natural process. After picking: cherries placed on drying beds in dehydration rooms; 3-day inoculated liquid spray application to degrade sugars for enhanced bean absorption; 15-day accelerated drying phase. |
