Our Roasting Philosophy

At Goût & Co, we aim to express each coffee’s distinct terroir through the lightest possible roast. Every coffee is carefully fine-tuned during roasting based on its green coffee characteristics, density, and origin, to find the point where its innate flavor potential is best revealed.

Rather than categorizing by Agtron color or roast appearance, we define our coffees by sensory experience and the personality of each coffee, dividing them into two distinct levels: Ultra-light and Light.

This approach allows you to more intuitively understand how we interpret and highlight flavor nuances.
